A New (ish) Butchery in Town

If you’re looking for beef, pork, and sausage from animals raised locally and ethically, look no farther than 5th Quarter Butchery & Charcuterie in Waitsfield.

Owner Josh Turka partners with Vermont farmers to bring the best of their offerings to the Mad River Valley and, in the process, demonstrate how thoughtful stewardship of livestock and land can directly impact the quality of the end product. In the 5th Quarter display case, you’ll see an enticing array of house-made sausage, charcuterie, and fresh cuts of meat that bring home that point deliciously.

Josh prides himself on whole-animal, nose-to-tail butchery and opening customers’ eyes to the different cuts of meat to be enjoyed. It turns out there is a world beyond short ribs and hanger steaks! Recent specials include bacon jalapeno sausage, house-made pepperoni, and Brave Little Bratwurst–a new offering made with another Valley favorite: Lawson’s Finest Brave Little State Pale Ale. 

Everything in the 5th Quarter display case is sourced from small Vermont farms, including the nearby Von Trapp Farmstead in Waitsfield and Union Brook Farm in Northfield.

You’ll find 5th Quarter Butchery & Charcuterie tucked inside Mad River Taste Place, open Tuesday-Saturday, 10 a.m. – 6:00 p.m. You can also find Josh’s products for sale or on the menu at Von Trapp Farmstead, Lawson’s Finest Liquids, Alpino Vino, the Featherbed Inn, and the 1824 House Inn & Barn.
